Niçoise-style sardine salad
Sardines with fruity flavours… and no bones!
A delicate process enables the bones to be removed while keeping the sardine flesh intact.
This avoids having to fillet the fish and any drying of the flesh during cooking. Combined with a lightly seasoned tomato coulis and then covered with a slightly fruity extra virgin olive oil, the sardines’ appearance and characteristics are preserved… without the bones!
