In this recipe, the tuna is preserved and enhanced by the extra virgin olive oil.
For maximum flavour and tenderness, the fresh tuna is cooked whole. Gently poached in a court-bouillon, it is then prepared by hand to ensure that only the best parts are used. The fillet is covered with a fruity extra virgin olive oil that is gradually absorbed by the fish, making it even more tender.
