These flavours, characterised by prunes and other ripe fruit are reminiscent of tajines.
Creating this recipe, we let ourselves travel further on the spice road to reach new exotic destinations. It seemed only logical to name this mixture of North African flavours after Zanzibar, the “Spice Islands” in the Indian Ocean.
