Vegetable tagliatelle with sardines with preserved lemon

Ingredients
All ingredients- 2 tins 1/6 (115 g) la belle-iloise sardines with preserved lemon
- 2 small courgettes (400 g)
- 3 small carrots (300 g)
- 1 onion (100 g)
- 12 cherry tomatoes
- 1 clove garlic
- 12 pitted green olives
- 4 pinches salt (2 g)
- 2 pinches pepper (0.5 g)
- 3 pinches ground ginger (0.5 g)
- 2 pinches ground turmeric (0.5 g)
- 2 teaspoons chopped coriander leaves (2 g)
- 4 tablespoons olive oil
Steps
- Using a vegetable peeler, make ribbons from the courgettes and carrots, and thinly slice the onion
- Slice the olives
- Fry the vegetables in the oil over high heat in a wok or non-stick frying pan, stirring constantly
- After 5 min., add the seasoning, the olives and the halved cherry tomatoes
- Cook another 3 min., the vegetables should still have some crunch
- Tip the sardines on top and warm, covered, for another 3 min.
- Sprinkle with the chopped coriander
- Serve hot immediately
- Accompany with some bulgur wheat.
