  • 2 tins 1/6 (115 g) la belle-iloise sardines with preserved lemon
  • 2 small courgettes (400 g)
  • 3 small carrots (300 g)
  • 1 onion (100 g)
  • 12 cherry tomatoes
  • 1 clove garlic
  • 12 pitted green olives
  • 4 pinches salt (2 g)
  • 2 pinches pepper (0.5 g)
  • 3 pinches ground ginger (0.5 g)
  • 2 pinches ground turmeric (0.5 g)
  • 2 teaspoons chopped coriander leaves (2 g)
  • 4 tablespoons olive oil
Let's get started
Steps
  1. Using a vegetable peeler, make ribbons from the courgettes and carrots, and thinly slice the onion
  2. Slice the olives
  3. Fry the vegetables in the oil over high heat in a wok or non-stick frying pan, stirring constantly
  4. After 5 min., add the seasoning, the olives and the halved cherry tomatoes
  5. Cook another 3 min., the vegetables should still have some crunch
  6. Tip the sardines on top and warm, covered, for another 3 min.
  7. Sprinkle with the chopped coriander
  8. Serve hot immediately
Tips:
  • Accompany with some bulgur wheat.
