Selecting top-quality ingredients

We cultivate the respect of the seasons, we choose ingredients with authentic taste and benefits, and we make the choice to do things well, right from the moment we purchase our ingredients. All this to offer you the highest quality products.

We have a voluntary purchasing policy that always prioritizes local products. La Conserverie sources primarily from Brittany, and we extend our sourcing to France and neighboring countries when necessary. In 2020, over 85% of our ingredients are French or European.

We work mainly with fresh products, and over 80% of our raw materials are raw ingredients. We meticulously select the oils, vegetables, seaweed and spices associated with our fish: first-rate ingredients, harvested in season, some with organic, PDO or PGI labels, to offer recipes with exceptional flavors.

Besides gustatory quality, we're looking for a know-how, a local specificity, a tradition... I'm very attentive to the human story behind the ingredient, as well as to the way it's produced and where it's produced. It's all about finding the perfect nugget, the supplier aligned with the values of la belle-iloise, and with whom to build a lasting partnership!

Favoring Sustainable fishing

As for our fish, we maintain solid relationships with our partner-fishermen, based on proximity, trust and transparency.

We are committed to sustainable fishing, working only with wild fish, caught at the right time of year and at maturity, and always sourced as close to Quiberon as possible. We refuse to source juvenile fish, endangered species, fishing during reproduction periods or using FADs (Fish Aggregating Devices).

To avoid any waste, we always buy in right quantities, depending on our current production capacity and how much material we can work with.

For us, buying doesn't just mean finding the most competitive price/quality ratio, it also means choosing suppliers who respect people and the Environment, and whose values resonate with those of la belle-iloise...

Cooking and innovating with taste

Our Research and Development department, led by our head chef François Sehier, member of the French National Academy of Cuisine, imagines new tastes and creates delicious recipes to bring you the pleasure of eating well.

From the simplest to the most elaborate, each recipe is the result of genuine research to find the perfect balance of flavors, textures and uses, so that we can provide you with the best possible eating-experience.

With a catalog of over 200 products, la belle-iloise continues to imagine new delicious cans every year to delight you and make everyday life easier. Whatever the occasion, la belle-iloise always has a good recipe to suggest!

My motto: "To create, to innovate, is to imagine differently". I find inspiration everywhere, all the time: a taste, a visual, a smell... and I make it my own. I think about how the customer will use the product. Sometimes, I invent a recipe based on an ingredient I find interesting, like the Batak berry or the paradise seed.

Offering quality canned fish requires the mastery of specific know-how, numerous manufacturing stages, and the precision of human hands to respect the fragile flesh of our fish.

At la belle-iloise, in our traditional workshop, we trim the fish by hand, using precise and specific gestures, from gutting to casing, for an aesthetic and tasty result. These manual gestures, at the heart of our know-how, are one of the specificities of la belle-iloise and add value to our products.

La Conserverie is ISO 22000 certified, an international standard of excellence guaranteeing food safety, from raw ingredients to finished product. This confirms that our products are healthy and safe.

Our beautifully designed cans are one of the hallmarks of La Conserverie!

Because appetite begins with the eyes, we pay as much attention to the presentation of our delicious fish inside the can as to the decoration of our tins. Each one is unique, and tells the story of the recipe, its world, its ingredients, its spirit...

We also pay particular attention to our gift boxes, whose designs are created with talent and creativity by renowned graphic designers and artists such as Olivier Lapicque and Marie Doazan.

In addition to containing good products, our cans are designed as beautiful objects: each one is finely illustrated to embody the personality of the recipe and make you want to contemplate it before savoring it. It's all about expressing the recipe's individuality while fitting it into a harmonious whole: the dreamy, colorful world of belle-iloise!
