Where are our tinned sardines fished?
Depending on the year, we may source 100% of our fish from France, 100% from Brittany, or even 100% from Quiberon, but some years we have to source further south, off the coast of Portugal, where fish is available and the resource is not threatened.
Once the sardines have been removed from the nets, they are stored on the boat in containers or tubs filled with ice. The freshness of the fish is key to its quality, which is why everything caught in the morning will be processed during the day.
