The smoothness of these rillettes is created by the fillets of pollack, which are shredded after cooking, and the extra virgin olive oil used to prepare them. The fine, iodised flavour of the fish is enhanced by seaweed flakes, mustard seeds and browned smoked onions. The whole is refreshed with a zest of lemon and crowned with the fruity, floral notes of Sichuan berries for a subtle finishing touch...
