Choux buns with Pollack rillettes
Reinvent the traditional Christmas surprise loaf with these splendid, delicious choux pastries that reveal a bouquet of iodised flavours perfumed with tangy notes!
 
                                             
                                            All the ingredients
- 4 tins of 60g Pollack and Szechuan peppercorn rillettes 
- 60 mini-choux buns 
- 1 Granny Smith apple 
- Juice of ½ lemon 
- For decoration : 60 coriander leaves 
Let's get started
- 
                    Step 1Cut the apple into 1 cm cubes toss in the lemon juice
- 
                    Step 2Cut the buns in half horizontally
- 
                    Step 3Put a piece of apple, then a spoonful of pollack and a coriander leaf in each base
- 
                    Step 4Put the top back on
