Pénestin bouchot Mussels
Listed as part of France's intangible cultural heritage, Pénestin bouchot mussels are renowned for their unique flavour and superior quality. Raised by our local producer (*) using traditional, artisanal farming methods, their excellence is also the result of their natural environment: waters rocked by gentle, salty currents, rich in phytoplankton, which provide all the minerals necessary for their growth.
(*) Our local partner, Axel Brière, a mussel farmer for three generations, founded Mussella, an association of producers committed to promoting oversized bouchot mussels, i.e. those that are too small to receive the European Traditional Speciality Guaranteed (TSG) label and therefore cannot be sold in fishmongers or restaurants.
So, to avoid wasting 50% of the bouchot mussel crop, Mussella shells them and delivers them to us, allowing us to offer you this eco-friendly cream soup that makes the most of an exceptional raw material and innovates for an increasingly virtuous diet!
